Earlier this week, I declared Melissa from No. 2 Pencil a genius of both the internet and the kitchen when I came across her recipe for just two chocolate chip cookies. Here I was, slogging over an entire batch every time I wanted delicious, fresh-baked cookies like every other chump baker out there when all I needed was Melissa the mathematician to break down the measurements of a standard chocolate chip cookie recipe to produce exactly enough batter for two perfect, ooey, gooey, heavenly cookies. Eureka!
Not only does this recipe turn out two perfectly large cookies (awesome for a single serving on a splurge day or for sharing with a friend if they are lucky), but it takes no time to put together, and (bonus!) only dirties one dish. On top of it all (yes, there’s more!), there aren’t 10 other cookies hanging around taunting you for the rest of the week. Bravo, Melissa. Bravo.
