I made this incredibly delicious, moist and dense banana bread a while back when I decided that my rotting bananas were meant for a higher purpose than the garbage disposal. And (silly me!) only posted a photo on my Facebook page rather than sharing the recipe in its entirety. Since then, I’ve had a few requests to give up the details, so here it is…for all you banana bread lovers out there.
You’ll need:
– 2 over ripe bananas, mashed
– 1 1/2 cup flour (I used whole wheat)
– 1/2 cup applesauce
– 1/2 cup Greek yogurt
– 1 cup sugar
– 2 large eggs
– 1 teaspoon baking soda
– 1 teaspoon salt
– 1 teaspoon pure vanilla extract
– 1/2 cup chocolate chips
What now?:
– Pre-heat oven to 350 degrees and coat a loaf pan with cooking spray
– In a bowl or electric mixer, cream together sugar and applesauce
– Add eggs and mix until combined
– In a separate bowl, whisk together flour, baking soda and salt
– Add dry ingredients to the applesauce mixture and stir to combine
– Add bananas, Greek yogurt and vanilla and stir until mixture is smooth
– Add chocolate chips and stir until evenly incorporated
– Pour into prepared baking pan and bake until a knife or toothpick inserted into the middle comes out clean, about 1 hour
– Allow it to sit in the pan for 10 minutes, then flip onto a rack to cool
