Since I moved to California, it was only a matter of time before kale started to make its way into my recipes – the stuff is everywhere I tell you! I’ve also been working on transitioning into a harmonious home office routine and a big part of that means starting the day off with a proper breakfast. These easy (and let’s face it, pretty adorable) mini crustless quiche cups are packed with protein and make my mornings a little brighter.
I followed this recipe from one of my favourite sites, theKitchn which is an amazing resource for easy breakfast ideas (and beyond!) I skipped prepping and chopping the kale — in the mecca of kale you need not worry about these steps — in favour of a pre-cut, pre-washed mix that also included a little bit of carrot and red cabbage which were lovely additions. Pack these little babies full of flavor; don’t be shy on the salt, pepper, garlic or goat cheese. You could also use another hearty green like spinach or broccoli instead of kale if you prefer.
Add a dash of ketchup or hot sauce and enjoy them warm out of the oven, or let them cool completely and refrigerate them individually for a quick breakfast on the go for up to a week! Mmm, mmm, good…
